Welcome back to the Fancy Fork – your seasonal produce insight and farm-style recipes that are made to satisfy.
Spring is in full swing with an abundance of new produce sprouting, including tomato vines growing strong in preparation for their upcoming first harvest! But, as we wait for those first tomatoes, we can enjoy spring onions, early zucchini, cucumbers, fennel, endive, asparagus, bell peppers, artichokes, avocado, arugula, celery, cauliflower, leeks and peas. Looking down the fruit aisle, you’ll notice cherries, nectarines, plums, raspberries, strawberries, grapefruit, mangoes, limes, cantaloupe and blackberries at their peak.
This month’s recipe is all about creating our own version of Gatorade at home using two seasonal fruits – mangoes and passion fruit. Mangoes are rich in antioxidants – a powerhouse in fact – they may aid in healthy digestion, boost the immune system and support healthy eyes. Passion fruits are very tangy, tiny but mighty and an excellent source of fiber, vitamin C and vitamin A.
Nature’s Gatorade is a healthier way to stay hydrated and provide electrolyte replacement that is without added sugar and additives. This Passionfruit & Mango Nature’s Gatorade is a bit tangy, bursting with tropical flavors and only uses four ingredients!
